Crock Pot Chicken, Tomato, Quinoa and Veggie Soup

A lot of people want to eat healthy, but don't have time to meal prep throughout their daily lives.  Crockpot recipes are helpful with this because you can do a quick prep and turn the crockpot on and forget about it for hours.  This soup recipe is delicious, nutritious and only took me 20 minutes to prep.  

For this particular recipe, all you need to do is throw all the listed ingredients in the crockpot, set it to medium heat and let cook for at least 8 hours.  About half way through the cooking time, remove the chicken and shred it in a separate dish.  Once you shred it, put it back and continue to let the soup sit and cook.

  • kcal: 500
  • Fat: 9g
  • Carbohydrates: 70g (16g from Fiber)
  • Protein: 36g
Directions
Place chicken on bottom of crock pot
Add in all the vegetables and beans
Add spices
Fill chicken broth to the top of the crock pot
Cook for 4 hours on low
After 4 hours remove chicken and shred it.
Put chicken back
Cook 4 more hours on low
Cook Quinoa separately and add when serving to avoid absorbing liquid when storing
